If God can use plate tectonics to create mountains, why can't he use evolution to create diversity in life?

Christians that won't accept evolution say that God wouldn't need to use evolution to create species, but if you say that, why would God need to use plate tectonics to create mountains? I hope you won't try to debate the existence of those. There are Bible verses that say that God forms the land and mountains, but I'm sure you don't take that 100% literally because we knew that erosion forms the land that that plate tectonic movement forms mountains; And if you don't take that literally, why do you take the Genesis story literally? God could have created life through the natural process of evolution, couldn't he?
